I have never made beef stew until recently. Frankly, "beef stew" makes me chuckle, mainly due to the randomness of it. But with the cold weather and Christmas spirit, I wanted something warm and hearty that I would never eat in the summer. So beef stew it was! And I definitely didn't regret it. This is a super simple one-pot meal - beef, potatoes and veggies all in one bowl? Sign me up. The cooking time is long, but the actual work you have to put into it is a piece of cake. There is about two hours of actual cooking time, so be sure to start this dish early enough! I may or may not have blared two hours worth of Christmas music while singing and dancing aggressively by myself while I was cooking this....but hey, that's one way to work up an appetite.
Beef stew is typically served with bread or over egg noodles (or by itself!). I served mine with some french bread to soak up all the ridiculously good juices.
