This dish combines two of my favorite things: brussels sprouts and mac and cheese. There's not much better in this world than good ol' creamy, cheesy mac and cheese. If I could eat it every day, I would. This is a somewhat "healthier" version of everyone's favorite side dish - I used wheat pasta, 2% milk and cut the pasta portion in half by using brussels sprouts. Besides, adding vegetables to any dish makes you feel a little better about what you're eating...right? This has become one of my favorite dinner sides. It's creamy with a little kick and a lot of flavor.
And for any brussels sprouts skeptics out there - don't knock it til you try it. And trust me...you'll want to try this.
