One of my biggest dreams is to go to cooking school in Italy. I mean, can you imagine? Learning the best techniques from incredible chefs while looking out the window at Tuscany. Life would be complete. My husband traveled to Italy a few years ago and fell in love with the food there, caprese salad being one of his favorites (aside from the endless pastas). I sometimes hesitate making Italian food for him, because he's had the best of the best. But I do it anyway, and he has yet to complain.
Like my husband, I love caprese salad. However, I get VERY bored of plain ol' baked chicken. So - why not combine the two? This caprese chicken has everything you love about caprese salad on top of a delicious piece of chicken. I sear the chicken before I bake it so it has a little bit of a crispier crust with a juicy middle, then add the cheese during the last few minutes in the oven so it melts over the top. Top with fresh tomato slices and a drizzle of balsamic reduction, and pretend you're dining on the Amalfi coast!
