Is anyone else feeling extremely puffy after the Thanksgiving holiday? My holidays consist of overeating and drinking with minimal movement. And I always pay for it when it's time to get back to reality. This chicken tortilla soup is always a go-to for me when I'm feeling the need for a detox week. ESPECIALLY with this cold weather.
Everyone has their preferences on chicken tortilla soup - whether you like it light and brothy, or thick and creamy. For those in the latter group, I'll warn you now. This is the "light and brothy" version. But give it a try - you won't regret it. And you won't feel guilty because it's a light meal, but it's packed with flavor and will keep you full.
Now, the name is a little deceiving because I don't actually use tortillas or tortilla chips, but you definitely add them to your bowl. I love to pack mine with avocado, jalapenos, shredded cheese and a dash of cholula. I also sometimes make simple cheese quesadillas to serve on the side. The world is your oyster, people! Dig in.
