For me, salads are great go-to meals when I just need to throw something together quickly and easily after a long work day, or when I run home during my lunch break. I can never turn down a good spinach salad with a sweet kick to it. This is a very simple salad with a few of my favorite ingredients - goat cheese (all day, every day), candied pecans and hearts of palm tossed in a homemade champagne vinaigrette dressing. But the best part is the crispy prosciutto topper. All you have to do is bake the prosciutto for about 13 minutes and throw it on top of your salad before you serve/eat it. And it looks more gourmet than it actually is - so it's a great side dish to impress your dinner guests (or yourself...#treatyoself). Eat is as a side, or as your main meal. Enjoy!
