As much as I love to cook and experiment in the kitchen, I just don't have enough time in the day to prepare complex, gourmet dishes during the work week. The problem is, I still have a high standard for taste and quality when I'm cooking (you're your own harshest critic...am i right?). If you've never been much of a crock pot user, I challenge you to change that, and change it quickly. Especially for all of you busy-folk.
Pork tenderloin is a great lean protein go-to for me. It's a lower fat option than other cuts (such as pork chops), but if you cook it right, it has just as much flavor, if not more. I also love how tender this cut of meat is - you literally pull it apart with a fork in this particular recipe.
But back to the crock pot. What I love about cooking in a crock pot is there is hardly any prep work, and I can turn it on in the morning or on my lunch break and let it cook for hours and it's ready when I get home from work. And cooking in its juices all day makes it extra moist (cue the word-cringe) and booming with flavor. Hope you enjoy it as much as I do!
