Noodles, zoodles, or your choice of what to serve the meatballs/sauce with!
1/2 yellow onion, diced
1 28-ounce can of crushed tomatoes
1/2 tsp salt
1 bay leaf
Saute diced onions for a few minutes to bring out the flavor (this step is optional...feel free to skip)
Combine the "sauce" ingredients into a crock pot (onions, canned tomatoes, salt and bay leaf)
In a large mixing bowl, combine all of the "meatballs" ingredients until everything is combined thoroughly (I use my hands)
Form golf ball sized meatballs with your hands until all the meat is used.
Place meatballs in the crock pot and submerge them in the sauce.
Cover and cook on low for 3-5 hours.
Remove bay leaf and serve over noodles, zoodles, or however you like! Pictured here are zoodles (I spiralized the zucchini, then sauteed them on medium-high heat in a tbsp of olive oil for 3-4 minutes before topping with the sauce and meatballs)
