This isn't the prettiest dish I've posted, but it's a keeper. Corn on the cob is a great go-to side dish, especially when you're grilling out this summer. I typically eat corn on the cob Mexican-style (butter, chili powder, cojita cheese and lime), or just plain butter, salt and pepper. But I wanted to switch things up, and I happened to have pesto and parmesan cheese in my refrigerator, so I decided to try it out.
And I don't regret it.
There's nothing fancy about this recipe. You grill and slather. It's messy and awesome.
