As often as possible, I try to create "healthier" versions of dishes whenever I can, without going overboard and sacrificing flavor. This is one of the successful ones that has become a regular rotation at the Dunlap house. The first time I made it for my husband, I wasn't sure if he was going to like it. Especially since it's the healthy version of stuffed peppers. But low and behold, it has become a favorite of his as well. It's also one of the easiest meals to make. The majority of the time involved is the baking time. Other than that, you're looking at about 20 minutes of prep and stove work combined. I'll take that any day.
Serves 4-6 (depending on if you're serving these as a side dish or your full meal)
Note: in terms of the pictures shown in this post, I made 4 stuffed pepper halves. I had extra stuffing left over from the measurements/portions listed below that could have filled another 1-2 pepper halves)
