I've said it before, but I just can't do a plain chicken breast. My husband could eat a grilled chicken breast with a side of veggies every night for dinner, but I will not allow this kind of behavior in my house.
This past Sunday, I meal-planned for the week before doing my grocery shopping. Wednesday night was set for grilled chicken and asparagus (womp-womp). These words began to haunt me as Wednesday evening approached. When I got home from work and pulled out all of my ingredients to begin, I said to myself: YOU ARE BETTER THAN THIS. So I looked in the fridge, saw some prosciutto and decided to dress this chicken up a bit so I could actually enjoy it. When I was done and took my first bite, I gave myself a fist-pump and marked this dish down as a victory.
