I've been making a lot of tuna salad lately to eat for lunch throughout the work week, but there's only so much tuna salad you can eat before you get burned out. So I decided to switch it up and try making salmon salad. I am LOVING this new recipe. It is so quick and easy - you can make it at night and eat it for lunch the next day, or even throw all the ingredients together in your office kitchen and enjoy it right then. It's that simple. There is no mayo in this recipe, so it's extra light and fresh. Eat it with crackers, on a sandwich, over lettuce, with a fork... just eat it, and thank me later.
