My husband could eat Thai food every day...Pad Thai is one of his favorite meals. As much as I wish we could eat it every day, we would probably be 20 pounds overweight. So I introduced him to a healthier "zoodle" version (zucchini noodle) in hopes that it would satisfy his Pad Thai cravings...and voila! Worked like a charm. This is one of the easiest dishes to make, and it will take you less than 30 minutes from start to finish. Everything cooks in one pan, so even the cleanup is a breeze. Win win win.
