But really, I was on a zoodle kick recently and this is another dish that came out of it. We all love a classic spaghetti and meatball dish, so I decided to cook a healthier version. I used hot Italian sausage in this particular post, but feel free to use meatballs instead.
I am also going to walk you through a quick homemade tomato sauce, step by step. Don't let this scare you away - it's harmless. Canned tomatoes or tomato sauces can have lots of added sugars, so this is the best way to know exactly what you're putting into your body. If you have hours of free time to spend on tomato sauce, I might recommend a different recipe. But, if you're like me and you need to whip up a quick dinner after work, this sauce works great. I will note that it's important to use Roma tomatoes when making tomato sauce, because of the skin-to-seed ratio (heirloom tomatoes have much more seeds/juice, while grape or cherry tomatoes have much more skin. Romas are a great balance). And it's peak tomato season right now, so get cookin!
